form with only --> one line register online

after speak with Hugh, he told me that in our project would be a trouble if we have more than 1 curriculum or resume of candidate's skills.. thinking about this.. would be a good idea to simplify the application process...

and to do this we have find 2 options.

1.- the candidate fill a form.. but only is possible to create 1 line register in the data base.. but for the moment any time that i use the form and save.. a new line register is created... is possible to show the form first time and once the candidate have save and there is a line register in the database hide the form. .and only edit ???

2.- make with a template.. so any "new candidate" instead see a form will see a list with a "template" editable --> is easier to make a list with a editable line register for any candidate...???'

which option would be better and easier??

First of all:
How do you know that the candidate has already registered?

Is he first a guest, then after registration a Joomla user? If yes then you can do it with access levels and/or comparing user id.
If it's depending on his input (e.g. unique email address etc) then you can add validations to prevent submitting.
