Which version of Fabrik should I use for new projects?

Fabrik 3.1.x - For Joomla 3.0 + or Fabrik 3.0.x - For Joomla 2.5

Imho you should always use the latest (meaning github joomla3 branch) version - with fabrik AND joomla. Though you might struggle with small bugs here and there,
I always prefer to play around with the latest stuff.
Another tip, as i had struggled with this for some time: the latest versions work only with your database engine set up as InnoDB and not MyISAM.

thank you for your feedback and insight, much appreciated. I ended up installing both versions to compare how they work, and I agree that the 3.1.x seems to be the way to go.
