What is the best way to approach this?

I am using MijoShop with Joomla 3. Basically, I want to take quantity of items order, address, and customer name and enter that info into a Fabrik created list.

I want a solution that will not cause problems with MijoShop updating. Should I just learn how to create MijoShop (OpenCart) extensions or is there an easier way?

You don't provide too many details as to what you need to do.

Fabrik can directly access the MijoShop tables and do whatever you need. You can also set the Fabrik list to not alter any tables, effectively giving Fabrik read only access.

Just to be a little more specific ... that doesn't really make the tables "read only", Fabrik can still write data to them. It just stops us form making any changes to the structure (like changing field types, adding or removing fields, etc).

This is about the "Alter fields" in list's "Advanced" setting.
But you can have a readonly table by setting Add /Edit/Delete/Empty access = nobody in list's "Access" settings.
